Pink peppercorn is hot hot hot especially when it comes to flavouring gin. Closely related to cashews, the pink peppercorn tree is sacred to Inca tribes who used all parts of the tree in medicine. So with such a healthful recommendation, I embarked on a sip of Never Never Pink Pepper Gin.
A pink peppercorn gin that is not pink
Don’t let the name lull you into false expectations. The gin is not pink but who needs coloured gin when you have such a wonderful concoction of flavours. Take off the lid and you a blasted with an intense aroma of pink grapefruit fused with 15 other botanicals including Murray River pink salt, pink pepper of course, Sichuan pepper, gunpowder tea, mandarin and poppy seeds.
These wonderful flavours work divinely with the Triple Juniper Process that Never Never Distilling Co uses in all their gins.

Never Never Collaboration
Never Never loves a good collab and so they developed this gin with one of Australia’s premier gin bars, Adelaide’s Hains & Co. Pink Pepper Gin is inspired by the good ship Hains & Co and the flavours of the spice trade routes of Asia. I t uses Pink Peppercorn and Sichuan pepper to deliver an exciting spice profile that marries beautifully with the citrus notes of pink grapefruit and mandarin. Poppy seed is first steeped to extract natural oils and then pot distilled to assist in delivering a long and extended mouthfeel. It’s a flavour supported by the carefully considered inclusion of Chinese gunpowder tea which contributes to length and overall complexity. A slightly elevated alcoholic strength creates the perfect gin for refreshing G&Ts while the citrus and spice botanicals create a fantastic platform for negronis and Martinez serves.
Hains & Co

Hains & Co has a special relationship with the Never Never Distilling Co. Before the distillery door in McLaren Vale, Hains & Co. hosted tastings, master classes and gin launches and thus it made sense to this special collaborative gin.
Hains & Co is located at 23 Gilbert Place, Adelaide and is open seven days from 4pm ’til late.
Tasting notes
Look – Brilliant and clear.
Smell – Pink grapefruit zest and juniper pine jump from the glass with crushed pink peppercorn and toasted Sichuan adding spice and fruit notes.
Taste – Bright mandarin and grapefruit combine with fragrant orris character developing into a warm pepper spice, with poppy seed adding a rich textural complexity. Gunpowder tea, Sichuan pepper and pink Murray river salt linger and add length.

Pink Pepper Gin & Grapefruit soda
30ml Pink Pepper Gin
100ml Pink grapefruit soda
Garnish with pink grapefruit wedge
Build in a tall glass, top with ice, stir and then add garnish.
White Chocolate Martinez
45ml Pink Pepper Gin
25ml Rosso vermouth
barspoon of white cacao
1 dash of angostura
Garnish with orange twist.
Add all ingredients to a mixing glass, add ice and stir. Pour into a coupette and garnish with a twist.
Spiced Negroni

30ml Pink Pepper Gin
30ml Sweet Vermouth
30mL Campari
Garnish with pink grapefruit twist
Add all ingredients to a mixing glass, add ice and stir. Pour into a short glass over block ice and garnish with a twist.
Pink Pepper Gin & Tonic

30ml Pink Pepper Gin
100ml Fever Tree Mediterranean Tonic
Garnish with pink grapefruit slice
Build gin and tonic in a highball or wineglass. Add ice and garnish with citrus.
