
Pepe Saya Takes Over QT Gold Coast
Butter. Is there anything it can’t do? Smooth a crumpet, mend a broken heart, keep entire French villages in business. And now it’s taking over QT Gold Coast in a collaboration so decadent that cardiologists everywhere are quietly weeping into their fava beans.
From 23 August to 30 September, Australia’s very own butter royalty, Pepe Saya (yes, that Pepe, the one who makes butter so good you’d happily eat it with a spoon while pretending it’s “for the sauce”), has churned up a vanilla bean butter exclusively for QT. It’s turning up everywhere on pancakes, in pastries, even in cocktails. Nothing is safe. Not your waistline, not your willpower, not your last pair of jeans with a functioning button.
Pancakes, but Make Them Pillow Therapy
At FIXX Café and via Room Service, you’ll find soufflé pancakes so cloud-like you’ll wonder if they came straight out of a Pixar film. Each stack is practically begging to be Instagrammed before you collapse into them face first. Toppings range from wholesome maple syrup and butter (classic, polite, Sunday brunch vibes) to full-blown Nutella-marshmallow-chaos with chocolate Pepe Saya butter (the kind of dish that makes dentists book ski holidays). There’s berries for the purists, and even a crème brûlée version for those of us who feel that breakfast without blowtorched sugar is basically a wasted meal.

Butter, Butter, Everywhere
If pancakes aren’t your jam (though jam is also involved, don’t worry), FIXX has rolled out a pastry line-up that should probably come with a warning label. Flat croissants caramelised within an inch of their lives, burnt butter chocolate cookies, baguettes baked so fresh you’ll want to smuggle one home in your handbag, and scones that arrive positively begging for a slathering of butter and jam. There’s also the sort of chocolate-studded delights that make you go “just one bite” and then suddenly you’ve eaten three while pretending you’re saving the last for later.

And because this is QT, you can’t just eat butter, you must drink it too. Stingray Lounge is serving up non-alcoholic cocktails from Lyre’s with butter drizzles. Yes, cocktails. With butter. It sounds mad but apparently it’s divine, like having your cake and drinking it too, without anyone side-eyeing you at the bar.

All of this is churned with love by Pepe (Pierre, if we’re being formal), who has somehow managed to make butter a rock star without ever wearing sequins. The whole shebang is gloriously Australian-made, gloriously over the top, and gloriously bad for any kind of diet. But then again, what’s life without a bit of butter on your lips?
